Mala Street BBQ

DESCRIPTION: Street BBQ is a must when you go hanging out with friends at the night markets. It becomes a part of the culture now in China and people even started philosophical discussion about the street BBQ. There is a very popular TV series called 人生一串 which is dedicated to show all kinds of street BBQs in China.


INGREDIENTS:

Meat of your choice - 450g ( recommended beef brisket, pork belly or salmon )

Vegetable medley of your choice - 300g ( recommended sliced king mushroom, sliced zucchini, sliced onion, or whole jalapeno )

 

CONDIMENTS:

Cooking Oil - 2 TBSP ( oil of your choice - canola oil or olive oil )

Soy Sauce - 2 TBSP ( recommended light soy sauce)

Chinese Cooking Wine - 1 TBSP

Corn Starch - 1 TBSP ( optional, recommended for beef meat only)

Garlic - 4 Cloves

Mala BBQ Dry Chili Seasoning - 2 TBSP

Green Scallion - 1 stalk ( optional )

Ground Sichuan peppercorn - 2 TSP ( optional )

Ground cumin - 1 TSP ( optional)


STEPS:

STEP 1 : Prepare all of the ingredients - slice the garlic cloves, slice all the vegetables of your choice, slice all the meat of your choice. Ground Sichuan peppercorns and cumin seeds ( optional but freshly grounded spices add stronger aroma to the food ). Cover the vegetables and put them aside in the fridge.

STEP 2 : Add Chinese cooking wine, soy sauce to the meat and mix them evenly. If you are cooking beef, add corn starch to the beef only. This is to make the beef tender after cooking.

STEP 3 : Add garlic slices, Mala BBQ Dry Chili Seasoning and freshly grounded spices ( optional ) to the meat mix. Cover with a top or plastic wrapper for at least two hours or over night in a fridge.

STEP 4 : Heat up a grill or a pan at mid-high temperature ( adjust the heat as needed ). Add cooking oil of your choice or coat the surface evenly with oil spray. Cook meat slices for about 4 minutes each side ( adjust the time as needed); turn and cook another side for about the same time. Grill or skillet the vegetables of your choice with the same method.

STEP 5 : Plate the meat and vegetables together. Sprinkle the plate with 3 tsp of Mala BBQ Dry Chili Seasoning , grounded spices and chopped scallion green ( optional ).
