Zhong Dumpling with Sauce

We are introducing this famous street snack from my hometown - Chengdu, Sichuan. They are boiled pork dumplings soaked in the special sauce. Back home, this restaurant created the dish and named after the creator Mr. Zhong. They are called " Zhong Dumplings " (钟水饺). The restaurant is very popular and is still operating till this date since 1893. In the collaboration with Hank's Oyster Bar DC, I am going to add shrimp to make it a bit fun and it will also fit Hank's profile.

The dumplings are smooth, and fillings are tender. The sauce is going to be based on our signature Chinese style chili oil. The sauce has a red color. The taste is garlic savory, slightly sweet and slightly spicy but more it has strong aroma from all the spices putting into the sauce.

Fun Fact: The Northern regions of China are known for dumplings and bao buns. These are their staple food. However, at my hometown, a Southern region city (cuisines are usually based on rice and soups), Zhong Dumplings are one of the hundred famous street snacks in Sichuan and they got very popular because of the sauce. Sichuan food is usually famous for its sauce goes with the food. Zhong Dumplings are one of them. Famous dumplings in the Southern region? That's Zhong Dumplings!

  • Pork, shrimp, ginger & scallion water, peppercorn water, black peppercorn, salt and sugar.

READY TO COOK – KEEP FROZEN DO NOT THAW – COOK THOROUGHLY

BEST CONSUMED WITHIN TWO WEEKS AFTER PURCHASE

**CONSUMING RAW OR UNDERCOOKED MEATS, POULTRY, SHELLFISH, EGGS, OR UNPASTEURIZED MILK MAY INCREASE YOUR RISK OF FOODBORNE ILLNESS**

STORAGE TIP: Store your dumplings in a freezer until you are ready to cook.

COOKING TIP: Boil frozen; use a pot that has enough space for dumplings to float around. Add more freshly crushed garlic cloves to the dumpling bowl if desired.

BOIL DIRECTIONS - RECOMMENDED

1: ADD – all sauce into a bowl and set aside.

2: ADD - 5 cups of cold water to a pot.

3: TURN – heat to MEDIUM to HIGH.

4: PLACE – 10 frozen dumplings into the pot and let them cook until they are floating on the surface (about 4 minutes).

5: ADD – 1/2 cup of cold water when the dumplings are floating on the surface and repeat the same action for one more time ( 2 times in total ).

6: REMOVE– pot from heat and string dumplings to the sauce bowl.

7: DEVOUR and ENJOY.
